FOX4: FAME: Make Your Own Fruit Popsicles

Food as Medicine Everyday (FAME) is a 10-week program offering nutrition education classes on a variety of topics to help improve diet and lifestyle. You’ll learn simple techniques to cook tasty, nutritious meals.Saint Luke’s Muriel I. Kauffman Women’s Heart Center is a founding member of the Food as Medicine Institute Alliance.

Watermelon Mint
Ingredients:
- 3 cups watermelon slices, divided
- 1 tablespoon fresh mint leaves
- 1 ½ cups coconut water
- 2 tablespoons lime juice
- 1 tablespoon honey
Directions:
- In a blender, puree 2 ½ cups diced watermelon pieces, mint leaves, coconut water, lime juice, and honey. Cut the remaining watermelon into ¼ inch cubes.
- Evenly divide the cubed watermelon into the molds, tapping bottom to release any air bubbles.
- Evenly divide pureed watermelon mixture among the popsicle molds.
- Place cover on mold and insert popsicle sticks. Freeze for at least 6 hours or overnight.
- For easy removal, run the molds under warm water for 10-15 seconds.

Peaches & Cream
Ingredients:
- 2 cups Greek yogurt (plain or vanilla), divided
- ¾ cup peaches, sliced
- 1 cup peaches, finely diced
Directions:
- In a blender, puree ¾ cup sliced peaches and ¾ cup Greek yogurt until a smooth texture is reached.
- To layer popsicles: place 1 tsp finely diced peaches, 1 tbsp Greek yogurt, and 1 tbsp blended peach yogurt. Repeat layers until mold is filled to the top.
- Place cover on mold and insert popsicle sticks. Freeze for at least 6 hours or overnight.
- For easy removal, run the molds under warm water for 10-15 seconds.
- Enjoy!
