Grace Hoffman, Nutritional Coordinator with Saint Luke's Mid America Heart Institute and the Food As Medicine Everyday (FAME) program, shares a fun summer recipe with the FOX4 morning show.

Food as Medicine Everyday (FAME) is a 10-week program offering nutrition education classes on a variety of topics to help improve diet and lifestyle. You’ll learn simple techniques to cook tasty, nutritious meals. Saint Luke’s Muriel I. Kauffman Women’s Heart Center is a founding member of the Food as Medicine Institute Alliance.

Watermelon Mint

Ingredients:
•    3 cups watermelon slices, divided
•    1 tablespoon fresh mint leaves
•    1 ½ cups coconut water
•    2 tablespoons lime juice
•    1 tablespoon honey
 

Directions:
1.    In a blender, puree 2 ½ cups diced watermelon pieces, mint leaves, coconut water, lime juice, and honey. Cut the remaining watermelon into ¼ inch cubes.

2.    Evenly divide the cubed watermelon into the molds, tapping bottom to release any air bubbles.

3.    Evenly divide pureed watermelon mixture among the popsicle molds.

4.    Place cover on mold and insert popsicle sticks. Freeze for at least 6 hours or overnight.

5.    For easy removal, run the molds under warm water for 10-15 seconds.

Peaches & Cream 

Ingredients:
•    2 cups Greek yogurt (plain or vanilla), divided

•    ¾ cup peaches, sliced

•    1 cup peaches, finely diced 
 

Directions:
1.    In a blender, puree ¾ cup sliced peaches and ¾ cup Greek yogurt until a smooth texture is reached.

2.    To layer popsicles: place 1 tsp finely diced peaches, 1 tbsp Greek yogurt, and 1 tbsp blended peach yogurt. Repeat layers until mold is filled to the top.

3.    Place cover on mold and insert popsicle sticks. Freeze for at least 6 hours or overnight.

4.    For easy removal, run the molds under warm water for 10-15 seconds.

5.    Enjoy!
